While the traditional ingredients are the basic ingredients you need, you can incorporate some or all of the optional ingredients.

Traditional Ingredients

– 1 cup of ogbono seeds

– Meat (beef, chicken, goat meat, or pork)

– Crayfish

– Palm oil

– Stockfish

– Smoked fish

– Cow skin (ponmo)

– Dried fish

– Onions

– Pepper (fresh or ground)

– Seasoning cubes

– Salt

– Vegetables (spinach, bitter leaf, pumpkin, oziza or scent leaf)

 

Optional Ingredients

– Okpei

– Ogiri

– Okra

– Garlic

– Shrimp

– Periwinkle

– Oziza seeds

The Three Different Methods of Cooking Ogbono Soup

There are three different methods of preparing ogbono soup. The first two methods can be cooked with all the ingredients mentioned above, while the last method is prepared with all but one major ingredient. I’ll let you find out what that ingredient is as you read.

 

The methods are:

1. The frying method
2. The boiling method
3. The oil-less method

How to Cook Ogbono Soup Using the Frying Method

Here’s a step-by-step process of preparing ogbono soup using the frying method:

Ground the ogbono seeds with crayfish, okpei, and oziza seeds
Season the meat with onions, garlic, seasoning cubes, salt, grounded pepper, and any other preferred spices
Boil the seasoned meat until tender
Add the cow skin to the meat and allow to cook for about five minutes, depending on how soft it is
Add the shrimp, periwinkle, dried fish, stock fish, and smoked fish and allow to cook for two minutes
Add the ogiri and stir
In a different pot, heat palm oil on medium heat and add the ground ogbono
Stir-fry for a few minutes until it releases a nutty aroma and darkens slightly. Be careful not to burn it
Add the stock from the cooked proteins and allow to cook
Stir the mixture until they blend smoothly. You may need to add more water to achieve the desired consistency
Season with additional salt, seasoning cubes, crayfish, and pepper if necessary
Add the chopped okra and allow to cook for a while
Add chopped vegetables, stir, and add the proteins. Allow to cook till the vegetables are well cooked
Serve with any swallow of choice

How to Cook Ogbono Soup Using the Boiling Method

Here’s a step-by-step process of preparing ogbono soup using the boiling method:

Ground the ogbono seeds with crayfish, okpei, and oziza seeds
Season the meat with onions, garlic, seasoning cubes, salt, grounded pepper, and any other preferred spices
Boil the seasoned meat until tender
Add the cow skin to the meat and allow to cook for about five minutes, depending on how soft it is
Add the shrimp, periwinkle, dried fish, stock fish, and smoked fish and allow to cook for two minutes
Add the ogiri and stir
Add palm oil to the stock and proteins and allow to cook for a while
Add the ground ogbono and allow to cook for a while
Stir the mixture until they blend smoothly. You may need to add more water to achieve the desired consistency
Season with additional salt, seasoning cubes, crayfish, and pepper if necessary
Add the chopped okra and allow to cook for a while
Add chopped vegetables and allow to cook till the vegetables are well cooked
Serve with any swallow of choice

How to Cook Ogbono Soup Using the Oil-Less Method

The oil-less method of preparing ogbono soup is simply done by omitting palm oil from the ingredients. Ogbono seeds,  which are high in fat, produce their oil.

Most times, this oil goes unnoticed because of the presence of palm oil in the soup. Interestingly, you can cook and enjoy it without palm oil, especially if you’re cutting down on your cholesterol intake.

 

Here’s a step-by-step process of preparing ogbono soup using the oilless method:

Ground the ogbono seeds with crayfish, okpei, and oziza seeds
Season the meat with onions, garlic, seasoning cubes, salt, grounded pepper, and any other preferred spices
Boil the seasoned meat until tender

Add the shrimp, periwinkle, dried fish, stock fish, and smoked fish and allow to cook for two minutes
